How to Make Pressed Sushi, a Traditional Food for Celebrations

Japan has a custom of eating pressed sushi for celebrations such as girls’ festival. Pressed sushi is a traditional food that is originated from Ishikawa Prefecture and now eaten nationwide.

Today we are going to tell you about how to make “pressed sushi” and how to add your own tastes.

The product we used:

Necessary equipment and ingredients

A pressed sushi mold consists of 2 parts – outer box, bottom plate and top plate.

If you have a pressed sushi mold, all you need to do is put vinegared rice and favorite toppings in it. In Japan, it is common in Japan to use a mold when making pressed sushi.

Prepare ingredients.

Various toppings can be used such as salmon, tuna, sea bream, scallop, shrimp, thin Tamagoyaki omelette, lettuce, okra, fish cake and even sliced beef.

This time we used salmon, fish cake, Tamagoyaki and lettuce.

The main feature of pressed sushi is that you can put anything you want. Also, add favorite seasonings such as mayonnaise, wasabi, soy sauce.

Next, let’s see how to use a pressed sushi mold.

How to make pressed sushi

1. Make vinegared rice

Mix cooked rice and vinegar in a wooden rice container.

First cook rice with a piece of dried kelp and tbsp of sake. Once it’s cooked, mix it with sushi vinegar in a wooden rice container. Below are the ingredients for sushi vinegar.

[For 180 mL of rice]

  • Vinegar, 1 and 1/2 tbsp
  • Salt, 1 tsp
  • Sugar, 2 and 2/3 tbsp

[For 360 mL of rice]

  • Vinegar, 2 and 2/3 tbsp
  • Salt, 1 tsp
  • Sugar, 2 and 2/3 tbsp

[For 540 mL of rice]

  • Vinegar, 4 tbsp
  • Salt, 1 and 1/2 tsp
  • Sugar, 4 tbsp

Mix above in advance as salt and sugar would take some time to dissolve.

2. Put the ingredients in the mold.

First put vinegared rice in the mold.

Put the ingredients in the flowing order: vinegared rice, toppings, seasonings or sauce, and vinegared rice again.

Adjust the volume as you will press all from top in the end.

Lastly, put the main topping such as seafood.

3. Press the sushi

Once you put all the ingredients are put, press sushi with top plate.

Make sure to press with enough strength (like all your weight); otherwise, the sushi will be collapsed afterwards.
