Background

Shimotori Corporation was founded in 1955 in Tsubame, Niigata, Japan, the center of cutlery and steel manufacturing.

Yokan is a thick, jellied dessert made of red/white bean paste, agar and sugar. It is usually sold in a block form, and eaten in slices.

Although Yokan is typically made with red bean paste, Yokan made from white kidney bean paste is also relatively common. This white bean Yokan is milky and translucent with a much milder flavour than that made of red bean paste. It can be effectively flavoured and Colored by using Matcha, etc.
